(2)烹调方法以蒸熟和稍微煎炸为主,务求保留食物本身的原味。上茶楼吃点心,香港人称之为「饮茶」, ... 肉丸除了味道要好,还讲究「爽口弹牙」(咬感有弹性、肉不黏牙)。

1)wiki上对al dente的描述仅适用于面食,或者occasionally蔬菜。

2)Though I think describing 猪肝弹牙 is a bit strange for me, I still believe that CHEWY TEXTURE could be used to describe all kinds of meats.

口感 could be translated as TEXTURE, but 弹牙 is only 1 kind of TEXTURES, there are a lot other textures.

So I assume it's not appropriate to translate 弹牙 as TEXTURE.

agree  Gertrude Tsau: You had the best part of pthe pok liver that's why. There is something chewy.It has to be removed before it is cooked.

  -> from http://dictionary.reference.com/browse/chewy, 2 out of 3 define CHEWY as requiring much of chewing, only 1 refers to hard to chew. Besides, while saying 弹牙,it implicates that we need to have a lot of chewing because of its texture.
