But that doesn't seem to me to be the context here, where they seem to be talking about the proportions of the ingredients in a food product. It doesn't seem to me to make any sense at all to talk about a % of the 'total water' (i.e. 'free' + 'bound'), when everything else is talking about the other ingredients in terms of their % weight of the whole product. |
