As I said in my note: Vox populi advise us to keep untranslated the name PESTO. So, take my suggestion as "Pesto and balsamic vinegar".

Hi Chivi - to avoid confusion, note that all contributors have recommended using the term "pesto" and not Genovese sauce. :O) :O)

Aceto balsamico is wine vinegar with fine herbs.

You may keep the name as Pesto, as suggested by SwissTell, but it\'s also known as Genoese sauce, look:

neutral swisstell : totally agree with the Balsamic Vinegar but you are off the mark on Pesto (which I wouold leave as is). Pesto is based on basilico and not a Genovese specialty and far from the concoction listed. Pesto sauces can be bought nowadays internationally.

agree moken : I have read the references and they don't. Saying it is a "Genoese sauce" means that it comes from Genoa, not that its name is "Genoese sauce" :O) :O)

agree Tony M : I have always heard it called 'pesto Genovese', but the term is so well known nowadays (and Genoese sauce isn't!), that I would DEFINITELY advise keeping the original term 'pesto'
