Incordare

Italian to English Other Food & Drink
I am translating a recipe and "incordare" is used to describe a point when the dough is being kneaded. The phrase is as follows:

Impastare fino a incordare l’impasto.

I found a link that gives a rather technical definition of incordatura but my baking knowledge is sparse and I have no idea what the word would be in English. (http://www.pizza.it/forum/impasti/incordatura)
