his eyes rolled upwards

If the guy is ALREADY dead, then his eyes rolled upwards. He is no longer technically able to do anything.

But if he is in the process of dying, then "he rolled his eyes" is fine.

Да, Вы правы, в цитате \"он ... завел глаза\".
Но в русском языке и умирающий мужчина и мертвый труп - мужсеого рода. Он - мужчина, он - труп.
А в английском про труп не скажешь \"he rolled his eyes\", а \"it rolled its eyes\".

Perhaps, it would be better to say "his eyes rolled to the back of his head" to put emphass on the involuntariness of the action. Rolled his eyes is the standard phrase for заводить глаза though.
