I would say that "proiettori incassati" are spot lights built in to the ceiling (i.e. which can be swivelled to change the direction of the beam), whereas "spotlights" are traditional spotlights.

Unless I am mistaken a projector light is the light source for a projector, so I'd be careful using that as a translation.
