relating to the provision of its own insurance cover

adesione looks at the situation from the context of the customer, but you can equally well state the same concept from the viewpoint of the insurer, which I think reads better in English

(relating to obtaining) subscription of insurance cover offered by the same

The "Committente" offers insurance cover through a service provider who will thus SELL (not provide or procure) said insurance cover.
Or more simply "relating to commercialization of said insurance cover".

Italian term (edited): alle adesioni alle proprie coperture assicurative

insurance policies (that have been taken out/sold)

I think you need to see the wood from the trees Chris "I adhered to an insurance cover" means "I took out an insurance policy"
In your context, if feel that insurance policy is quite sufficient, but you can put sold or the longer more faithful "have been taken out".
