: It's not a Valencian word. I think it's probably a corruption of the French.

I would query this with the customer. I'm not sure it's anything to do with sole, which is lenguado.
Yo tambien creo que se trata de salsa meunière (salmeunière en dialecto valenciano).
En este caso la traduccion seria: Calpe fish with meunière sauce ( otherwise will be a la meunière )
