I know that, generally, sakarkand is "sweet potato" but what I'm looking for is the English name of a variety that can be and even should be, eaten raw. When cooked, it's supposedly not so tasty. The tubers are longish, purple, and white inside.

The tubers have purple skin, and they're quite white inside. The people from Gaya in North India call it sakarkhand and actually advise to eat it raw

Is it a sweet potato or a yam? There are 2 varities os sweet potatoes: one has a pale yellow skin and flesh and the other is bright burnt orange flesh. It is almost never eaten raw. Certain yams on the other hand can be eaten raw eg Japanease yam.

No, its not beta vulgaris which I know very well. The "sakarkhand" is said to be white inside. I found Ipomoema umbellata, but it doesnt seem to be used as food

It looks just like sweet potato The only problem I have, is that sweet potatoes, yams and cassava shouldn't be eaten raw as that contain some poisonous substances unless they are cooked or at least soaked in water.
I wasn't able to find Ipomoema umbellata on Google and the only Google images of "candytuft" are those of some flowers

It is actually (Ipomoea batatas), food plant of the morning glory family (Convolvulaceae, but Sweet potatoes are served as a cooked vegetable, in whole or mashed form, and are used as pie filling.
