In that case, how about: 'In the previous year, the fair's premises hosted 191 events and had 768 bookings' and just get rid of 'days' completely. Although how can you have more bookings than events?

It refers only to one year as the premises can be booked several times per day as well.
Hi Martian (I’m answering up here due to a greater character limit) - yes, though I would word it “in the previous year, the fair’s premises were reserved/in use for 191 events taking place on 768 days”. One problem: there are only 365 days in a year, so perhaps it should be ‘in recent years’?

The fair’s premises were reserved/in use for 768 days.

‘Occupancy days’ does return some results from a quick google search, but I don’t really like the sound of it. I feel that this suggestion sounds a little more natural.
