In a conveyor context, it appears that "sabre" is "nose bar". Naturally my first thought was "counter-cutter"... but the problem is that nothing seems to come up when I search on e.g. "convoyeur contre coupe" or "conveyor counter-cutter".
Incidentally, the word "coupe" also occurs hundreds of times: which I think translates as "cutter".
Needs a specialist I fear... any cheese chopping machine experts out there?

I suspect you're looking at the plastic (or similar) bar a knife or guillotine blade comes into contact with when it completes its cutting action. Of course French execution guillotines and samurai warriors have no need for such things when lopping off heads because they carry through with their stroke, but in food processing this might cause chaos, not least rough edges on the cheese.
Imagine rather this cutter bar as the chopping block on which you split your wood or, as Henry VIII might prefer, on which you place your wife's neck.
I imagine the sonontrode thingy causes the bar to vibrate slightly, causing a 'sawing' action to ensure the cheese is cut right through.
In the photo below you will see a white plastic cutter bar espousing the curvature of the conveyor belt and thus forming a sharp edge at the top, which could easily cause the French to call this bar a sabre. And it IS a nose bar, albeit one with an ulterior purpose.

You will also find barre de contre-coupe said of static bars in shredders, i.e. a mating part against which a rotary cutter will exert cutting pressure on branches, etc., only without contact between the two cutting parts.
