Normalmente, "choose sth over sth" significa "elegir una cosa frente a otra". Sin embargo, aquí no parece tener ese significado y no soy capaz de dar con el sentido de la frase. ¡Muchas gracias de antemano por vuestra ayuda!

I think the meaning here is normal connotation which you suggest ""elegir una cosa frente a otra".
Without knowing what "this" (choosing "this" over our...) refers to in the source it is difficult to be sure.

Thank you very much for your help, Neil. In this context, "this" is referring to "our new search engine". So this could be interpreted as "Users are increasingly choosing our new search engine over our core quality". As per context, "Los usuarios eligen cada vez más nuestro último motor de búsqueda por nuestra calidad" would make more sense than "prefieren nuestro nuevo motor de búsqueda antes que nuestra calidad". However, I'm not sure if this approach is right. |

Now, as we look at the journey we've made over the last six years, it's been quite incredible.
Users are increasingly choosing our new search engine over our core quality. And if we look at how that choice is being reflected in what consumers tell us,
