In general, cows are fed on fresh grass in New Zealand, the herds consist mainly of Jersey or Jersey/Friesian cross cattle. This contrasts with Europe, where stored feed is more common, as are cattle breeds such as Friesians. The combination of these factors leads to the higher colour of New Zealand milkfat. In New Zealand most cows calve in spring which may further increase the colour of the milkfat in spring. In New Zealand, cows fed fresh spring grass can have β-carotene up to 13 mg/kg fat, however when cows are grazed on mature summer pasture, these values decrease substantially to about 5 mg/kg (this may be expressed as μg/g)
