As expressões "take the bull by the horns" (segurar o boi pelos chifres) e Seize the bull (cercar o touro) são comuns em inglês e o anúncio substituiu o termo "bull" por "bold". É difícil manter o trocadilho em português.

Vou manter a sugestão do "pegando o boi" porque é uma expressão popular comum no Brasil e reflete exatamente a mensagem original

É que, quanto a mim, fazer referência à cor da carne não parece resultar muito bem... a não ser que esteja associado o facto de a carne ser grelhada e daí aquele aspeto mais escuro?

teria mais contexto sobre "bold"? Pelo que eu pesquisei, "Seize the day" seria o "carpe diem/aproveite/curta o dia".
Poderia ser "aproveite/curta...", mas não sei se ficou muito claro para mim "bold" só com esse contexto.
Espero que seja pelo menos parte do caminho para te ajudar...
