I am not sure about the engraving into our wedding rings.
I want to promise to my fiancee: אל אשר תלכי אלך
Can she return: אל אשר תלך אלך

In Hebrew you need to change the wording when addressing a male or a female. To address a male say:
אל-אשר תלך אלך
and to a female:
אל-אשר תלכי אלך
BTW, this is taken from the biblical book of Ruth, chapter 1/17.

אלך לאן שתלכך

אלך לאן שתלכי = this is from Man to Woman
אלך לאן שתלך = this is from Woman to Man
אלך = go
לאן = where
שתלך = you go
You can make it longer = לאן אשר תלך, אלך אחריך
Which is: wherever you will go, I will follow
