JPaul, L'usage de la majuscule dans "Pledge property" indique qu'il s'agit d'un "terme défini" dans l'acte. Vous devez référer à la section Définitions (s'il en est une) ou à la phrase qui se termine par "... (the "Pledge")" - ou par "... (the "Pledge Property")" - pour déterminer s'il faut utiliser le singulier ou le pluriel en français - ou une autre expression comme "gage immobilier", "sûreté", etc. qui ne porte pas à confusion et qui doit rester la même dans tout le texte.

But in order to answer your specific question, we need to see the exact wording of the preceding section of the source text in EN, which you have merely précis-ed for us in FR.

@ Asker I guess it all depends what the intended meaning actually is!

IF the money is to be used to buy the apartment, but NOT the garage, then there might be an argument for expressing it as you propose.
But I seriously misdoubt that would be the case; I believe the apartment is simply being considered as a whole in conjunction with its accompanying garage.
You really need to give us the preceding source text in EN — it seems to me that it is you who have converted 'the object' (= singular) into 'les biens' ('pledged property' = singular in EN) — remember that 'property' used in this way is uncountable, and so might include several 'biens' (= countable) in FR.

BTW, I also have some doubts about your rendering of 'special-purpose' as 'spécialisé' — if you have any doubts about this term, might I suggest a furthaer KudoZ question could be advisable?
