It should read "gristle" and it is "cartílagos", although Spanish people often incorrectly call it "nervio". Silver skin would be "telilla", basically it is just a thin layer of transparent fat between muscle tissues.

En primer lugar, lo de "sliver" hace refererncia a 'lonchas'. Así que a lo mejor, mira el resto del contexto, puedes hablar de 'filetes'. No estoy segura.

En segundo lugar, lo de "grizzle" descoloca bastante. Creo que no se refiere a 'cartílago'. Fíjate en esto que encontré en la red:
"When people eat meat, they are careful to trim away as much of the connective tissue elements such as skin, grizzle and cartilage)as possible."

Así que hace diferencia entre "cartilage" y "grizzle".

"sliver skin" is the thin flat and fibrous membrane that covers the muscles, and should be trimmed before cooking, because it's not tender.
