In about an hour, the lettuce will go into shock.
Place prep tag on food safe storage container.
Label, date, initial and refrigerate.
Shelf life shocked: 5-6 days from pack date

crisp the lettuce It might be another way to say, it is crisped. As what you see in the previous action, the lettuce is put in the lettuce crisper so in an hour's time, it is set to crisp? Does that make sense!?
