Trata-se de uma tradução do português para o inglês de um cardápio de restaurante. O segmento anterior ao que me está causando dúvida faz referência a um prato de massa italiana aparentemente consagrado, que recebe, como observação embaixo, a seguinte frase de apreciação:
"- Prato assinado pelo Cheff Silvio Podda da Casa do Sardo."
Não estou muito confiante em traduzir "prato assinado" como "dish signed by Chef...", mas também não acho que seja "prato de assinatura" (que seria "signature dish") o significado pretendido exatamente...

: Chefs often have more than one signature dish, and " special dish" is completely wrong in this context;

: AB is wrong as usual. In our own hotel & catering business, our chefs and pastry cooks didn't have more than one signature dish or dessert, besides which 'chef's special dish' is also quite right in the context.
