En general, "dar fe" es un concepto específico que se refiere a la autoridad que se ha dado al notario para aseverar que un documento es cierto.
La fe, en este sentido, no equivale a "firma y sello" sino más bien a la autoridad que el notario ha recibido del Estado para validar o verificar los documentos. Creo que que "authority" es más fiel al significado original en este contexto.

No creo que sea necesario (o adecuado) traducirlo palabra por palabra, porque en inglés suena más simple. Por ejemplo, si lo traduciría como "I attest on my faith" o "I attest faithfully" estaría perdiendo el significado de la frase en español. Creo que esta frase significa algo muy simple. No es que tenga que ver con la fidelidad. Tiene que ver con el acto de certificar algo. "Attest" es un sinónimo de "certify" según Black's Law Dictionary.

Different countries (and even different regions within them) have different firmulas for notary's attestations. Whilst it's possible to "copy" such an (English) formula, that would not really amount to a translation.

To the best of my knowledge, this phrase is actually the end of nothing, but on the contrary the beginning of a series of points the notary public is attesting.
In fact, a notary makes statements under their oath of office.
