Agree with Chema, flattening the curve can mean two different things, one is not an ideal situation (constant number of new cases) if the daily incidence is high. In Spanish, "doblar" is definitely meant in a positive way; in English, "flatten" is also positive. However, any scientist or analyst worth their salt will tell you that "flatten" is open to interpretation. But that's what the popular press do, misinterpret and misrepresent science for the masses. Throughout the pandemic it has been astounding how many journalists have compared apples with oranges, misread graphs and data and made outrageous assumptions based on their misconceptions and lack of scientific training.

Never heard or read the use of "crush".

Hola Marcelo, literalmente la idea de doblegar es la de bend (bending the curve; "doblar o torcer encorvando". En relación al covid, pej., en referencia a que una curva ascendente de nuevos contagios se torne descendente por disminución de los mismos).

En función del contexto, "crushing" podría funcionar (con la idea de "aplastar" la curva; doblegar con el sentido de "hacer desistir"). Flatten/flattening the curve podría tener este mismo sentido (en un gráfico acumulativo de nuevos contagios, por ejemplo, una curva plana significaría cero nuevos contagios -manteniendo un número estable de contagiados) o uno más literal y menos ambicioso (una curva plana de nuevos contagios puede leerse también como un número estable, no creciente pero tampoco decreciente, de nuevos contagios, pej. en una serie temporal de nuevos contagios).

Así, la mejor lectura dependerá de la interpretación que hagas del original en base a su contexto y al sentido que le quieras atribuir. Las diferencias supongo pueden considerarse sutiles en cualquier caso ya que prácticamente nadie, a pesar de toda la sobreinformación al respecto, entiende realmente la diferencia en unos casos y en otros.
