في إحدى المرات رفض أن يأخذ من يدي علبة الكولا، بعد أن تحسسها وهي في يدي، أمرني أن أرجعها إلى الدكان وآتي بعلبة أبرد. استحمق العم علي الشاكر ورفض إرجاعها كغير عادته، أو أنه سئم مني، في كل مرة أشتري علبة كولا أعيدها إليه بسبب مزاج هادي

I feel like this might be a spelling mistake?

Literally, استحنق , means got infuriated/mad/enraged and whatever other attribute that suggests extreme anger. Contextually, given the writer's tendency to get into detailed descriptions, which he didn't do in this case and, given that the narrator and probably his entire family are likely everyday customers, the shop-keeper couldn't have gotten into a fit. Hence, an adjective that expresses reasonable anger should suffice. I opted for ''upset''. As for translation within context that Linda mentions, I guess that she makes a point there regardless of generation of author.

Played/acted dumb I am only guessing the narrator is saying the shop keeper is pretending to be dumb, to avoid replacing the item. Mind you, judging by your questions, the book was written recently, and we cannot assume that today's authors are sticking to the rules and do's and don't's of the language. You translate based on a context not a dictionary entry.

My guess is العم علي الشاكر is one person, and the verb is intransitive, meaning he went crazy, lost his temper

The correct term is اسـتحنق, not اسـتحمق. Let us look at both:

The verb اسـتحمق means "became أحمق," and أحمق means "a fool."

the verb اسـتحنق is an unnecessarily complicated way of saying حَنِق, which means "got mad, upset, angry, etc."

People often confuse the two. This writer did. You shouldn't.

Where I grew up, most people say حمق عليه when they mean حنق عليه. However, they correctly say مسـتحنق, not مسـتحمق. They also use the verb يحمّق in a completely different sense, "to boast, to show off." I can't think of where that might have come from.

It depends on how angry the guy was (or likely to be). I can imagine him being simply annoyed or irritated, or possibly being intensely irate, enraged, or furious.
