pliage de la Gironde

Au mois de mars, on remplace les piquets et on procède au “pliage de la Gironde” pour ralentir la montée de la sève dans le sarment et mieux nourrir les raisins sur son passage.

My attempt:

In March, the stakes are replaced and the plants are folded over and attached to wire in a special way, a technique known as “le pliage de la Gironde”, to make the sap in the vine shoot rise more slowly.

@ Rory Depending on your target audience, it seems a good idea to avoid such phrases as "...in a special way" - which sounds very much as if you're either talking down to the audience or aren't totally sure of your terminology. As an adult reader, I would find this both condescending and unconvincing!

These vines are cut to the Guyot double cut, over ‘arcures’, a system that involves bending the shoots and attaching them to two parallel wires to encourage the flow of sap to the whole of the shoot and to all the eyes, rather than just to the very tip of the shoot. It therefore encourages a more even distribution of energy and nutrients throughout the shoots and the plant.
