¿Cómo se podría traducir "intercalados" en este plato? Entiendo que se refiere a que van poniendo un langostino y después un trozo de pulpo en la brocheta.

Dos brochetas de langostinos y pulpo de la ría, intercalados y marcados a la plancha acompañados de patata cocida y ajada.

In culinary texts this is a very usual way of saying that the ingredients on the brochette are in a certain order, created by threading on each ingredient, alternating as you do so.
Example sentence:

Thread alternating pieces of chicken and cherry tomatoes onto metal skewers, season and cook on the barbie or in the oven until cooked through and serve with the stacks.

Then thread the chicken on to the skewers, alternating 2-3 pieces of chicken with the lemon slices. Then you can place the brochettes in a baking dish, covered with foil, and they’ll be all ready to go when it’s time to grill.

neutral Cecilia Gowar : That is the right word but in English you would see it in the instructions for threading the skewers, not in the name of the dish, so I would suggest to skip it in the Sp version.

Thanks Cecilia. I agree with you, as it names the two ingredients used, it can most definitely be omitted.

The gender intercalados must refer to the langostinos y pulpo de la ría rather than Dos brochetas.
