My question is, can Einnahme (einer Tablette) be translated as intake (of a tablet) or is it totally wrong?

Re your question, "3 intakes per day" does not sound right to me. If I were a proofreader, I would probably amend that to "3 doses per day" (see Veronika's suggestion).

"Dose" would be the usual term here.

Sure! Herr xx wollte wissen, ob er zusätzlich zu den 3 Einnahmen p/Tag noch eine vierte
Tabletten schlucken darf, da er so grosse Schmerzen hätte.

is the default, as in "requires taking one tablet per day". Are deviations possible? Of course. But they're not likely to include "intake".
