Another mysterious ingredient, this time from an industrial recipe for beer biscuits. Text: "55kgs Farinha, 5 kgs fécula,15kgs açúcar, 3,500kgs manteiga, 0,700kgs carbonato, 0,200kgs bicarbonato, 2kgs **pizão**, 7 litros cerveja, 0,030kgs canela, 7 litros agua, 700gramas sal refinado."

I have no idea, after much dictionary and online research, what this might be. Bear in mind that it may be a typo (I've tried the obvious ones) or an obsolete or regional word.

Any ideas?

lexical (asker) Mar 2, 2020: I am very sorry to have to close this question without grading. It's not what I wish, but the end client has not been able to cast any light on this term. I suspect they don't know. I am therefore not in a position to make a judgement about the proposed answers. But thanks you all for taking the time to contribute.

I have over a dozen recipes for bread and biscuits from traditional bakeries in a municipality near Porto, all of them dating from the late 19th century to 1935. I'm beginning to believe that pizão is a regional or obsolete word, so I have asked the client, who is an archivist in the same locality.
