Parsing Please note that your incorrect parsing may be confusing you here; it should be regarded as:

"quel montant maximum de ... avez-vous choisi ?", with "capital mobilier" being a separate unit of meaning.

François is right: your question should read montant maximum de capital mobilier choisi and Phil is right about capital mobilier (he posted his answer as I was getting mine ready!).

The question is effectively about the amount of cover the applicant (« the individual seeking insurance ») wants to buy for their furniture, clothes, works of art, equipment, anything in the house/flat that can be moved (mobilier), except for what is specifically excluded.
