stabilized hotels and hotels in their growth stage

This refers to the occupancy rate and/or revenue of hotels. When they are new, it takes about 3-5 years for the occupancy/revenue to grow to where they stabilize.

I like 'established hotels', but an alternative might be 'mature hotels'.
Example sentence:
