"Illustrative and non-limiting examples of such thickeners are alginates (sodium, potassium, or ammonium salts thereof), carrageenan, glactomannans such as guar gum, locust bean gum, and/or carob bean gum)

NB : carob bean and locust bean are translated in french with the same term, so I need different terms to translate them if possible.

locust bean and carob bean seem to be synonyms and define the same plant, but there is also African locust bean which gives parkia gum, so you could use maybe "gomme de parkia"..

gomme caroube

used as a thickening agent in lots of fields, including culinary!
AFAIK, the 'locust bean trea' is the carob tree = caroubier.
