Le négociant sélectionne dès la parcelle ou chez le vigneron, les raisins ou les cuvées qui lui conviennent, pour ensuite les élever dans ses caves, avant de les commercialiser chez les cavistes, dans les restaurants, les bars à vins et dans les réseaux de distribution moderne.
Le mot “éleveur” a un sens bien précis, à prendre dans l’acception première du verbe élever.

I don't know of a one-word term for this in English. I have seen "négociant" used and then qualified with an explanation along the lines of "who matures/blends the wines in their own cellars" or "bottles wines under their own label".
