jarrete pie / jarrete mano

Spanish to English Other Livestock / Animal Husbandry Slaughterhouse terms
SPAIN. Have a butchers' at this. The glossary offers "shank" for "jarrete", but some dictionaries suggest both "hock/shank". I suppose "pie/mano" refers to the back and front trotters, respectively. But what do we call them in English?

"En el matadero se realizan las siguientes actividades:
Sacrificio (Corrales, Aturdimiento, Desangrado, Escaldado, Eliminación del pelo, Extracción tripas y despojos rojos). Despiece (Despiece de la canal del cerdo: jamón, paletilla, cabeza, tocino delantero, jarrete pie, jarrete mano, lomo)."

agree Charles Davis : Or hock (same thing). Shank seems to be a bit more more common.
