Die Eintragungen (im Satzbuch) beziehen sich in der Mehrzahl auf Häuser, aber auch Weingärten, Fleischbänke, Gewandkeller, Badestuben, Hofstätten etc., manchmal wurden sogar Burg- und Bergrechte oder Erbschaften verpfändet.

I believe it has something to do with the Weingärten, not "mining rights". Any ideas?

From the context, it means "right" rather than "law".

I haven't managed to find support for my answer in so many words, but my example sentences, both from old documents, suggest that it's probably correct.

viticulture law

According to Wikipedia: In Niederösterreich, Steiermark (und Krain) wurde/wird die Bezeichnung Bergrecht auch im Sinne von Weinbaurecht, Weinbergrecht verstanden.

I'm not certain of the translation, but there is certainly some basis for thinking viticulture could be involved, as you say.
