I'd write it like this:
"Use a potentiometer to measure/determine the pH and adjust with HCl, as necessary."
or
"Determine the pH with a potentiometer and adjust, if necessary, with HCl."
Your own suggestion ("potentiometric determinination of pH") is the correct name for the method/procedure but it is difficult to incorporate in the whole sentence.
I would certainly not use "potentiometrically".
