This appears in a list of things to be shown in he technical drawings for items of packaging for medecines " réserves de vernis, code article, zones techniques pour les mentions variables etc.

spot varnish
Réserve de vernis or vernis sélectif/réserve would essentially be a type of highlight on a particular section of your print that you would first mark in the image file.
That's translated into English with spot varnish or spot UV.

: It's actually the opposite, here: spots WITHOUT varnish. / It's not "perhaps" — the s/term here is the ANTONYM of 'vernis sélectif' — it's an 'absence sélective de vernis' if you like.

Perhaps, but she said she found the definition. Unless that meant it was given by the client, the meaning of the terms as I described them is well documented, unlike the processes in her definition. Ultimately, OP has the most context, so it's up to her.

I don't know about this as an official technical term, but it would be consistent with other kinds of areas being defined to 'mask off' something.

which seems to be saying the opposite (shiny area to give a reflection).
So definitely a varnished or unvarnished area then - very confusing! But the definition you found would seem to fit the context...Maybe go with "unvarnished" and check with client?
I'd normally say "unvarnished areas", but here it presumably means some areas don't have a glossy surface applied.
