I'd like to know what does "figure" mean here?

the ideal type of the therapist embodied by "You"

I understand this as being about the ideal type of the therapist that the person being addressed by the author is meant to embody. The use of the pronoun "You" seems to be intended to ellicit that person's (the reader's?) identification with this ideal type.

in the idea of you as a person

One of the definitions of "figure" in the Oxford Dictionary is "a person as contemplated mentally" - that seems to fit well here.
