Italian term

lievito pronta maturazione

Italian to English Other Food & Drink
This appears in a list of ingredients to make a cake. I'm not sure what kind of yeast it is referring to and can't find much on the internet. At all other points in the recipe it only refers to it as "lievito".

Help is appreciated.

Discussion

James (Jim) Davis Dec 11, 2015:
OK then it is lievito di birra and yeast
fountain (asker) Dec 10, 2015:
It is a recipe for Pandoro. The other ingredients for the dough are flour, eggs, sugar, butter and this yeast. I hope this helps.
Rachel Fell Dec 9, 2015:
Yes, I agree with Jim.
James (Jim) Davis Dec 9, 2015:
Can we see the list please in original Italian Lievito di birra is yeast, but lievito by itself is usually lievito per dolci which is baking powder. As for the "pronta maturazione" this would suggest yeast, but if we could see the recipe it should clear things up.

quick yeast/instant yeast

I presume they mean this type of thing:

The Difference Between Active Dry Yeast & Instant Yeast

The difference between these types of dry yeast is simple: active dry yeast has a larger granule and needs to be dissolved in water before using, while instant yeast has a more fine texture and can be mixed right into dry ingredients.

Baker's yeast is the common name for the strains of yeast commonly used as a leavening agent in baking bread and bakery products, where it converts the fermentable sugars present in the dough into carbon dioxide and ethanol. Baker's yeast is of the species Saccharomyces cerevisiae,[1] which is the same species (but a different strain) commonly used in alcoholic fermentation, which is called brewer's yeast.[2] Baker's yeast is also a single-cell microorganism found on and around the human body.

fast rising yest

Maybe?

"lievito a pronta maturazione" gets very few hits; clearly, it is not a standard term. I think one can only guess here.
