Of course you could say yield instead of return or earned instead of paid, it would make no difference.
In banking the "raccolta" sometimes termed "provvista" is the funding or customer deposits. Deposits is often used in a broader sense by banks to include bonds that the issue to customers as in the loan to deposit ratio which is "il rapporto impieghi/raccolta". What they are talking about here is the cost of funding or the "mark-down", the interest paid to obtain funds as opposed to the "mark-up" the interest charged on loans. The difference or the spread is a bank's "net interest income" "margine di interesse"

returns paid to investors

There are several ways you could say this; they're talking about the interest-rate spread between borrowing and lending. Raccolta means fundraising, ie borrowing.
