Hi,
I'm translating some recipes for a chocolate manufacturer and one of the ingredients is "buccia di arancia rapè"
I can't find an explanation for "rapè" anywhere. I thought maybe "grated" but I can't find anything to back that idea up.
Can anybody tell me what it means?

I agree: zest = the outermost part of the rind of an orange, lemon, or other citrus fruit, used as flavoring.

While not mentioned the ideas is to use the oil contained in the zest of the orange peel (only the orange part) and not the entire peel!

Well, Alicip...maybe it's not grated chocolate then...it's grated orange peel/rind...but the term in question "rapé" is still "grated" and the instincts of the asker were right...that's the most important thing in the end!

It means "grated". Etimologia: ← dal fr. râpé, part. pass. di râper ‘grattugiare’.
