in a written text, like a sales agreement, What is the correct way to write
NIS 5,000 or 5,000 NIS
does the NIS come before or after the amount, as in dollars: $5,000, or after, as in: 5,000 NIS?
If using NIS 5,000: is there a space between the NIS and the amount?
all that when using number for the amount, not spelling the amount.

NIS 5,000 or 5,000 NIS

There are different styles and standards; both of these are used. My experience is that "NIS" is more often put first in technical or financial contexts, whereas in more informal contexts the text generally is as pronounced.

I don't recommend leaving out the space, though -- that is non-standard and, I think, hard to read.

NIS 5,000

Though this could be viewed as the LTR version of the Hebrew format it could also follow the format with the monetary symbol following the sum as it is pronounced. However, financial and official use is placing it before the sum similar to the $ & £.
Whatever you do choose, be consistent throughout and/or inline with the style set by the publisher/client.

agree Simon Charass : In English the currency symbol or name, NIS in this case, comes in front of the amount. The symbol it closed-up, $5,000 or €5,000, and the name is spaced out US$ 5,000, euro 5,000.
