il sentire

Si tratta della ben nota espressione italiana "il comune sentire" o "il sentire" di un popolo, in questo caso specifico però si parla del popolo tedesco all'epoca di Lutero:
"Prima di Lutero esistevano almeno 17 versioni tedesche della Bibbia. Il grande riformatore volle però realizzare una versione che fosse più in linea con il “sentire” del popolo tedesco. [... + non si tratta, dice Lutero, di chiedersi come il latino si debba trasferire in tedesco, bisogna piuttosto interrogare «la madre in casa, i bambini in strada, il popolo al mercato»."
In questo caso quindi è sia una questione puramente linguistica ma anche di "sintonia" con l'essenza del popolo tedesco...

Indeed. I agree but "sentire" is what the text says and since, unlike the Reformator, I cannot take much liberty with the original I have to add this, true or untrue as that may be.

they called it the vernacular at the time; bible/mass were in Latin; Luther wanted them to be in the vernacular so as to be understood by the common people. Reflect the common sentiment or common capabilities would not be exactly it

essence

Penso che l'espressione non si riferisca semplicemente alla lingua effettivamente parlata in un dato luogo, quanto piuttosto a ciò che la lingua sottende: il sentire di un popolo dipende dalla sua identità culturale, fatta di molti aspetti, tradurrei quindi l'equivalente di 'essenza di un popolo'.

In my view this is what the author has said. However, in my view Luther wanted a translation which was more in line with how the ordinary German people understood and used their language, which is not quite the same thing.

The word "German" is obligatory here, but only because the translation was into the German language and not another.
