Roof or ceiling? I assumed, rightly or wrongly, that there is no ceiling (ie, that the construction has no 'innertak').

Roof or ceiling? The "i" in "Ryggåstak i storstuga och kök" strongly indicates that "-tak" should be translated to "ceiling", and not to "roof".

vaulted/pitched/open beam ceiling/roof

usually ryggåstak would refer to an open beam type of ceiling in an inverted V shape, this is also called vaulted or pitched ceiling/roof

Are you heading for EN-GB or US or something else?
Example sentence:

ridge beam/board/pole roof design

Seems the Swedish term isn't really used consistently, so your context will determine what is meant. The Swe reference here is an indication (http://www.byggahus.se/forum/tak-vind/32828-ryggastak.html).

What this answer indicates is the your term fits with ridgepole design. This is my guess since your context is a 'timmerhus'. Otherwise, the supporting beam at the roof peak can be called 'ridge beam' or 'ridge board'.

Otherwise, if you are describing the ceiling or inner roof, the Swe reference gives you an idea 'öppet till nock' -- which seems to fit Tania's 'open beam' or similar.

Cathedral ceiling

This is what I've heard it called. I can't find any particularly good sources for the term, though.
