In a description of a Côtes de Gascogne red:
"Vendangé volontairement sur le fruit pour bénéficier de tous les arômes de fruits rouges des raisins"
I know "boire sur le fruit", but don't know this one and only have found a Canadian blog with this expression, which didn't help enlighten. Any ideas out there?

Given your sentence, you migth have to change this to something like, "harvested when the grapes' red fruit flavours were at their peak".

I frequently translate harvest reports where they say that the alternation of cool nights and hot day time temperatures enabled the grapes' fruity flavours to be preserved. The suggestion being that more tannic, riper flavours would have developed without the cold nights.

The grapes are deliberately harvested when the hints of red fruit are greatest
volontairement here means deliberately - it's a choice to harvest at this time.

Maybe also hinting at manual instead of mechanized harvesting.

Entre le moment où un raisin doit être vendangé sur le fruit frais et un raisin trop mûr, c’est une question d’un jour,
