I'm translating a recipe book, and "ostia" is used several times in the context of lining a pan for baking cookies, spreading nougat, etc.

Example sentence: Formare dei biscotti, poi cuocere a 200 - 220°C su silpat o ostia.

I've found references on Google, but I haven't found what it actually is. Similar to parchment paper?

My mother used to place the wafers directly in the cake pan and then put the macaroon mixture on top of each wafer. She did not use "carta da forno", the cooking parchment paper (which, btw, is not edible).
In your translation there seem to be two options: either the silpat (silicone baking mat) or the wafer; both serve to avoid the cookie sticking to the cooking pan.

Yes. I used to be a dessert chef once upon a time... it is used with mixtures such as macaroons and sticky meringues as these can stick to ordinary parchment paper and be difficult to remove. Using edible baking parchment/rice paper resolves the problem.

Use of this paper? Thanks to everyone for their answers. I was wondering though if the Italian chef sometimes uses this interchangeably with carta da forno? For some of the recipes I'm translating, it's used to line cookie sheets or cake pans (for cookies and cakes). Does anyone have experience using it like this?

It is something like a wafer, generally white, thin, round and edible. It also is called "rice paper" oder "edible wafer paper".

There seem to be various types: with the German "oblaten" the cookies are baked on a thin, edible wafer called oblaten. Oblaten are crisp, white wheat wafers. The same made with rice will turn it into "rice paper".

The German wafer in Daniela's example is a baked product, whereas the asker's context is a paper-like product for lining a pan. Definitely not parchment paper - that is cellulose-based and not edible.

These days, the paper is not always made from rice, as the following description from the Waitrose (UK upmarket supermarket) website shows:
"Rice paper
This is an edible wafer paper made from potato starch, water and vegetable oil.
Uses: Rice paper is used to line baking trays to prevent sweet bakes such as biscuits and meringues from sticking. The paper does not influence the flavour of the items baked"
