просто "major"

Просто "major" и больше ничего не надо. В Америка Вас спросят: "what was your major" и в ответ будут ждать именно указания профилирующего предмета. Слово "subject" необязательно.

Peer comment(s):

neutral Leah Aharoni : Here "profiliruyushie predmeti" is plural while most Russian students have only one major. Besides, the profiliruyushii predmet is not always the same as major (major in medicine, prof.pridmet biology).

He earned excellent an excellent score on the exam in his concentration area or in his specialty.

Context, context, context?

This says one exam. If it mentioned several exams, I would suggest "earned excellent marks for courses in his major."

But this sounds more like academic departments for instance in graduate school. There, one might study in the history department. One could specialize or concentrate and hence take an oral qualifying exam in 20th century history or the early Middle ages or some other era.
