agree Nikki Scott-Despaigne : "batten" or "slat" for "latte". Also, perhaps "laid down", laid horizontally" or "set down horizontally".I find it odd to use on their sides" - circles don't have sides.

Hi Nikki, I meant as in a bottle can be stored standing up or on its side.

"sur latte" -bottles are turned and tilted on wooden laths- for 9 months, at minimum (in view of foaming).

This fermentation will take place in the stacked bottles of wine. This is usually done by laying the bottles down on their sides, neck to punt. Two wooden slats are laid across each row.
