I am translating a set of instructions for a laboratory test to detect unstable proteins in white/rose wines.
I am stuck on the word "plongeur" within the context shown below.
La collecte des vins sur cuve homogène se fera au choix :
- âpres un remontage
- par le dégustateur au niveau des robinets âpres avoir fait couler 500 mL de vin
- par un plongeur avec une bouteille propre

What does this correspond to in English?

A wine thief is used to take samples. Here is one in a US catalogue:

I must admit that wine thief does not sound very technical, and depending on your context something along like Zachary's suggestion might be more appropriate.
Or you could go for simplicity and just say "extractor" (which is also listed in termium).

After going back and forth with the client a couple of times, I finally got a good description of this device: "il s'agit d'un tuyau ou tube avec lequel est prélevé le vin et mis en bouteille à l'extérieur de la cuve". This description corresponds quite well to a wine thief, and it happens to have a plunger-type mechanism at the end. |

: A search on Google images shows a number of different types, all along the same theme, and which match the French. A number of wine bars adopt the term to name their bar, a fun play on words.

Submersible Sampling Tube
I have a friend who is from France and he's a winemaker (he owns his own winery). I have asked him and he stated: "I would go with 'submersible sampling tube,' I have yet to see the tool in the US, doesn't even exist in the catalogs ... Don't think there is a set word for it, wine thief is wrong (some people suggested it online) ..."

: Sometimes pros in any domain use equipment without knowing the term for it. "Wine thief" is a standard term and does appear to match what the Asker wants. A number of winebars adopt this for a name and use it in the sign outside. Check Google images.

I would consider the audience, of course. "Wine Thief" might leave doubt. A "submersible sampling tube" is highly descriptive and leaves no doubt as to what you're referring and is accepted by an expert winemaker who disagrees with Wine Thief.
