Hello all,
The following comes from a list of chocolate recipes. I realise that pocher normally means poach, but that doesn't seem right here. Could it be "pipe" (as piping bag is poche à douille)? Thanks for any help!
Crème glacée Gianduja
Mélanger et mixer • 448 g d’eau • 53g de poudre de lait • 7g de stabilisateur pour crème glacée • 25g de jaunes d’œufs • 150g de sucre inverti
Cuire à 85°C.
Ajouter • 170 g de Gianduja 23,7 %
Refroidir dans un bain glacé puis réfrigérer toute la nuit.
- Pocher dans des moules en cube puis placer en cellule de refroidissement jusqu’au montage du dessert.

Yes, you're right: using a 'poche', so pipe — in FR, it would be assumed to be using a bag, so no real need to specify that; an EN cook would use whatever method they prefer.
