for seven years of corked aging? To be aged seven years with the cork? This simple appendage to the phrase (con tappo in sughero) has me at a loss as to where to put it so that it doesn't read awkwardly. It comes in an otherwise fluid text (both in the original and in translation).
"E come tutte le cose preziose ha bisogno di tempo così riposa nei caveau di Bellavista per sette anni con affinamento con tappo in sughero."
