vin civilisé

not literally "civilised" I wasn't intending "civilised" in the literal sense, but in the sense of "great, super, fantastic...", which is a very comon usage of this word, and can apply to a good many contexts. If I said "this is a very civilised wine", I wouldn't be talking about civilisation, or anything connected with it!

I find "civilized wine" slightly unsatisfactory as it implies that there is such thing as uncivilized wine... Yes, wine is a civilized thing, a product of civilization, but this is presumably true of all wines, not certain wines.

Personally, I see nothing wrong with "a civilised wine", where "civilised" stands for all that is good... as in:

Apparently, Ernest Hemingway called wine "one of the most civilised things in the world", so why not use the same term?
