S.I.W. (Snij-, Indroog- en Waardeverlies)

Dutch to English Other Food & Drink Meat processing
The shrinking/drying after the meat has been placed in cold storage.

Is there a specific term for this?
Trim, shrinkage and value loss? Trim and shrinkage loss?
I'm thinking of simply 'carcass weight loss' but I'm not sure if this is what is commonly used. Any help what be really appreciated.

Cannot find any specific terms for S.I.W. However, since it is specifically stated, 'carcas weight loss' will not do. Translating this one literally is "alternatiefloos" (alternativlos = German Unword of 2011).
